Gluten Free Onion Rings

I’m admittedly not a huge fried foods fan. I could go without cheese sticks. Fried zucchini? Meh, I’ll take it or leave it. And okay, okay, I do love French fries, but I’d probably be safe to guess that so does 95% of the planet. However, in the book of Angela, there’s one bar food that stands above the rest and that is the onion ring, the fried food far superior to all other greasy treats, if you’re looking to indulge.

I’m not saying this to be a total B, but my family ate at fast food restaurants a lot when I was younger. I guess I liked the food then? Burger King was the only fast food business that I’m aware of (maybe Sonic did too) that offered onion rings instead of fries. That was ballin’. I liked Burger King more for that reason. At some point, I decided that all that grease was making me fat (it was), and I stopped going to those places.

There’s one restaurant in particular near my house that has some great onion rings, and when I got the opportunity, I’d order onion rings as my side there. But truth be told, fried food makes my stomach sick. It has for a long time, and I’m not just saying that to be a total B, either. Now, I limit my fried foods/bar foods to VERY seldom special occasions. However, I’m all for versions of my favorite foods that won’t make me sick. Enter Gluten Free Onion Rings.

I made these onion rings for the night of the Super Bowl, which was actually the last day of my 21 day sugar detox (<–second time doing this! It’s becoming an annual thing). Speaking of the Super Bowl, how cool were Katy Perry’s dancing sharks? I loved them.

Back to the onion rings. Using a blend of nut flour and starch flour and a coconut milk coating, I was able to bread these babies without much fuss. After baking them for a bit, I brushed the outsides of the rings  with coconut oil to get juuuuust a little bit of that crispy, decadent taste that makes onion rings what they are. And guess what? You don’t even have to feel bad about eating them (not that you should feel bad eating everyday onion rings, but ya know).

My only note about these gluten free onion rings is that they do not reheat well. I didn’t expect them to, since the breading is not traditionally fried. Serve them immediately, and you’re golden!

Gluten Free Onion Rings

Serves: Approximately 16 onion rings
 
This is a gluten free, lighter twist on a bar food staple.
Ingredients
  • 1 sweet onion
  • ⅔ c almond flour
  • ⅔ c arrowroot flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 egg
  • 1 c full fat coconut milk (canned)
  • 3 tbsp coconut oil, melted
Instructions
  1. Preheat oven to 400°.
  2. Prepare a baking sheet with parchment paper.
  3. Peel onion and cut into rings, slicing in the same direction as the rings and pulling apart, careful to avoid ripping the slices as best as possible.
  4. In a bowl, combine almond flour, arrowroot flour, garlic powder, onion powder, salt, pepper and paprika.
  5. In another bowl, whisk together coconut milk and egg.
  6. Dip onion rings in coconut milk and egg, followed by the flour. I recommend using forks to move the rings to minimize wasting any of the mixture on your sticky fingers!
  7. Place each onion ring on the baking sheet, leaving a bit of room between them.
  8. Bake for seven minutes, flip the rings and then brush each ring lightly with some coconut oil.
  9. Bake for five to seven more minutes or until very golden.
